First course (choice of one)

Tuna Tostaditas (GF) – three blue fin tuna tostaditas with guajillo and achiote, cucumber, chiles, aromatics, avocado purée, sesame

Smoked Barbacoa Sope (GF) – activated charcoal, smoked beef cheek, avocado epazote crema, pickled onions, micro cilantro

Blue Corn Masa Gnocchi (Vegetarian) – masa–ricotta gnocchi, roasted poblano cream, charred corn, charred scallion oil

Second course (choice of one)

Chicken al Pastor Ballotine (GF) – pineapple guajillo glaze, Oaxacan mole, arepa, white bean chorizo purée, roasted plantain

Hamachi Collar Asado (GF) – grilled Hamachi collar, blue corn tamal cake, cucumber, and green papaya salsa, pickled Fresno, cilantro, charred citrus
