Sauteed Brussels Sprouts – chorizo, goat cheese spread, micro cilantro

Roasted Pumpkin & Pear Soup – creme fraiche, duck confit, microgreens

Pimiento Cheese Beignets – harissa sauce and onion ash

Second course (choice of one)

Tuna Tiradito – aji amarillo, leche de tigre, scallions, chili oil, crispy leeks, parsnip chips

Fried Pork Belly – sweet potato souffle, harissa glazed, crispy potato

Sauteed NC Shrimp – with green Tabasco sauce, roasted cherry tomatoes, toasted baguette

Third course (choice of one)

Pan-Seared Venison Rack – ricotta gnudi, arugula, crispy prosciutto, parsnip puree, au poivre sauce

Grilled Salmon – marble potato, Romanesco cauliflower, celery root puree, bacon jam, chili oil

Roasted Chicken Airline Breast – red wine farro, spinach, chicken jus, chorizo Iberico, romesco sauce
